Sake Lees Soup
The ultimate duo, warming you up
Anyone who knows Shinshu winters understands the severity of this season.
At high altitudes, the morning and evening chill is exceptional.
On such cold days, there is a bowl that warms you to the core.
Takaten Sake Brewery's Sake Lees × Shinshu Miso
The encounter between sake lees and miso, two fermented foods
Takaten's sake lees are a byproduct of carefully brewed sake.
They are packed with rich aroma, natural sweetness, and nutrients.
When you combine them with Shinshu miso,
the fermented foods resonate with each other, creating a deep richness and umami.
A way to warm up that your body will love
From the perspective of Eastern medicine, this combination makes perfect sense.
Sake lees warm the body and promote the circulation of qi and blood.
Miso supports the spleen and stomach (digestive system) and has the power to warm the body from within.
Furthermore, both are fermented foods that work to improve the intestinal environment.
It is said that cold is the root of all illness,
and this sake lees soup is truly 'edible wellness'.
The preparation is simple
1. Make your usual miso soup
2. Use your favorite ingredients like root vegetables or deep-fried tofu
3. Just before turning off the heat, add Takaten's sake lees
4. Gently dissolve them in and bring to a brief boil
5. Add a little ginger if you like, to warm up even more
The key is to add the sake lees after the miso soup is made.
With just this, your usual miso soup transforms into a special bowl.
