#240 | Layered Stew and a Quiet Moment of Happiness.
It's the change of seasons, isn't it?
Good evening, this is Tsubu.
Autumn in the south is slow, and I can still get by in short sleeves during the day.
But before bed, I change into a sweatshirt to gently warm my body.
I recently made "layered stew" again.
It's a cooking method I've loved for 10 years, and one of my favorite forms of dietary therapy.
You separate the ingredients by yin and yang, layer them in a pot, and simmer them slowly over low heat.
It's very simple, yet it has a surprisingly gentle flavor.
I think this is what they mean by "nuchigusui" (medicine for life).
This time, I layered:
shiitake mushrooms, shimeji mushrooms, onions, and carrots
and simmered them, then used them to make...
- Minestrone
- Mixed rice
- Rolled omelet

Finally, you can add salt, but considering my mother's blood pressure, I held back this time.
From here, cover it and let it simmer over low heat for 45 minutes to an hour.
During that time, you must never peek (lol).
You'll smell a wonderful aroma along the way, and that's your signal that it's ready.

Simmering over low heat for 45-60 minutes, just watching it "bubble away." I really love this time spent watching over it.

Both the time spent cooking and the time spent eating
were moments of happiness for me.
It doesn't have to be every day.
I want to cherish this time of standing in the kitchen
and quietly preparing meals.
Being able to eat well is nourishment for the soul, isn't it?
