Having used the 1000X since the original 'lunchbox' era, loved the XM3, gracefully skipped the XM4, and am currently quite satisfied with the WF-1000XM5, I'd like to break down the 'differentiation' between the AirPods Pro 3 and the Sony WF-1000XM6, strictly from a 'user-based' perspective.
To put it simply,
if your main device is Apple, AirPods Pro 3 is almost the only choice, and if you only use Android, the WF-1000XM6 is fine—or rather, it's the best.
For Apple device users, the AirPods Pro 3 are 'essential infrastructure'
If you use an iPhone, iPad, or Mac daily, the AirPods Pro 3 are no longer just 'earphones' but more likepart of the OS.
Automatic switching between devices
Spatial Audio + Head Tracking
Integration with the 'Find My' app
Call quality and microphone stability
These features, among others, are designed to 'eliminate all minor stresses'.
Honestly, when it comes to noise-canceling performance alone, there is no longer an 'overwhelming difference' compared to Sony.
However, if you have multiple Apple devices,
working on a Mac → taking a call on an iPhone → watching a video on an iPad
even if you move like this, you don't have to think about anything on the AirPods side.
This 'comfort of not having to think' is the greatest weapon of genuine Apple products.
Therefore,
Your main smartphone is an iPhone
You also use an iPad or Mac
You want to fully utilize iCloud and the Apple ID ecosystem
For people like this, I believe that going straight for the AirPods Pro 3 will lead to higher overall satisfaction.
For Android power users, diving deep into the 'Sony rabbit hole' with the WF-1000XM6 is the right answer
On the other hand, if you are someone whose 'main device is Android' or 'I don't really own any Apple products,' then
my honest opinion is that for noise-canceling truly wireless earbuds,you can't go wrong by choosing the Sony WF-1000XM6.
I have been following Sony NC headphones since the 1000X (that 'lunchbox' from back then), bought and loved the XM3, skipped the XM4, and am currently quite satisfied with the WF-1000XM5.
Sony's noise canceling is the type that 'erases the world, including ambient sounds, entirely'
The ambient sound mode has a bit of a learning curve, but once you get used to it, 'switching between modes' is fun
DSEE, EQ, and the detailed adjustments available in the app really tickle the geeky side of you
It's different from Apple's 'natural' feel; there is a 'joy of savoring the gadget' to it.
Now, to be honest about one thing regarding the XM6,
(I can't say this too loudly, but) it feels like it's leaning back toward the 'bento box' era of the first generation—that is a fact.

Both the case and the earbuds themselves are moving slightly against the recent 'lightweight and compact' trend
That said, in exchange, you get more peace of mind in terms of specs, such as battery life and antenna performance
So,
if you only plan to use Android
if you prioritize noise canceling performance and sound quality even if the size is a bit large
if you actually enjoy tinkering with the app
—for that type of person, I think you'll be happier diving deep into Sony rather than forcing yourself to choose AirPods.
'Which OS is yours' is more important than 'which one is better'
From the perspective of someone who has used both,
AirPods Pro 3 and WF-1000XM6 are no longer in a phase where you decide the winner based solely on noise canceling performance.
What matters is,
whether the 'OS world' you live in is Apple or Android
whether you want 'seamlessness' or the 'joy of tinkering' from your earphones
You should choose after being aware of this.
If you are surrounded by Apple devices, AirPods Pro 3 will give you 'air-like comfort,' and if you only use Android, the WF-1000XM6 will give you that 'rich, Sony-esque experience'.
As someone who has been following the 1000X series since the original lunchbox-style model,
I believe that both can be 'god-tier devices if they fit your world,' so I think it's best to decide on one quietly based on your own primary environment.
