Rice Flour and Okara Powder Matcha Cookies

As I mentioned last time, I would like to introduce a homemade snack today.
My family loves matcha, so I've been wanting to make matcha cookies for a while.
These are low-sugar cookies that don't use wheat flour or butter.

Rice flour: 100g
Okara powder: 20g
Sugar (brown sugar or beet sugar): 30g (low sweetness)
Egg: 1
Baking powder: 2g
Coconut oil: 30–40g (adjust based on the dough's consistency)
Matcha: 6g (you can add 2–3g more if you prefer a stronger flavor)
1. In a bowl, combine 30g of coconut oil, 30g of sugar, and one egg, and mix well.
2. Add 100g of rice flour, 20g of okara powder, 2g of baking powder, and 6g of matcha, and mix.
3. If the dough is too hard and doesn't hold together well (as the consistency changes depending on the size of the egg), add 5–10g of coconut oil.
4. Roll the dough into a ball, wrap it in plastic wrap, and let it rest in the refrigerator for about an hour. (You can skip this if you are short on time.)
5. Roll the dough out to 3–4mm thickness and cut into heart shapes.
6. Bake in an oven preheated to 180°C for 10 minutes first, then check how they are doing and bake for about 5 more minutes. (I think it's best to adjust the baking time while watching for browning.)
* Since I wanted them to rise a bit because I cut them thin, I added a little baking powder, but I think you can make them without it.
* You should use rice flour intended for confectionery; otherwise, the dough might not hold together well, and cutting shapes might not work out.
* Okara seems to be included in high-FODMAP foods (foods that are easily fermented in the gut and contain sugars that are difficult to absorb), so if you are concerned, you can make them without the okara powder. In that case, you could increase the rice flour or add potato starch.
* I think the intensity and quality of matcha vary depending on the manufacturer.
Coconut oil is heat-resistant, so it can be used for cooking and baking. However, it seems it's not good to consume too much of it.

For those concerned about additives in baking powder...

There is this organic baking powder available. (I found it at the supermarket LIFE.)
Perhaps because they contain okara, these cookies are quite filling. Please try making them if you'd like 🎵 They were well-received by my family, who said, 'These are healthy!'
