Easy Mackerel Sandwich
A mackerel sandwich is a simple Turkish dish consisting of grilled mackerel, lettuce, and onions (sometimes tomatoes) sandwiched in bread, with lemon squeezed over it.
But first, I bought some pastrami ham for the first time in a while.

It has pepper around the edges.
In our house, we usually eat pastrami ham as a marinade.
We actually make quite a lot of it.
Because by the time it's well-marinated, it's often already gone.
I'll cut the vegetables into thin strips.
Carrots, celery (including the leaves), green peppers, and the new onions that are in season right now! I slice them up, cut the pastrami ham, peel the slices apart one by one, and put them into a container.

I also add the celery and its leaves.
I add extra virgin olive oil, balsamic vinegar, apple cider vinegar, capers, and salt.
I add black pepper and sugar, mix it all together, and put it in the refrigerator.
I like to let it sit for at least half a day.

I let it marinate.
It gets better the longer it sits.
This time, I'm thinking of adding this.
Also, I'm using a Topvalu side dish for the grilled salted mackerel.
It's very convenient; you can just heat it in the microwave at 500W for 40 seconds.
Of course, it's also useful as a regular side dish for rice.

Then, I make a slit in a French baguette and toast it slightly in the toaster oven.
I spread whole-grain mustard and mayonnaise on the bread.



I tear up some lettuce and put it in.
On top of that, I add the grilled mackerel and the pastrami ham marinade.

Finally, squeeze some lemon over it (?) and it's done!
Now, let's go for a picnic!
