May 1st - May 15th Herbs and Meals. "Dill-scented Mushroom and Cream Cheese Pate"
In "Herbs and Meals," I would like to
introduce dishes using herbs and spices
and delicious herb-based meals from
our daily dining table.
I struggle with the contents of my refrigerator every day and make good use of frozen storage, but
I always end up with leftover herbs.
「Not letting herbs go to waste」
is one of my themes.
For me, the herb that is easiest to have left over is "dill." Although small packs are sold,
they contain more than you might think. (I'm grateful for that, though)

When I buy dill, I immediately wet a paper towel, wring it out well,
and store it in the refrigerator with the pack.
This helps it last longer.
This time, I will introduce a mushroom pate that uses plenty of that dill.
[Ingredients]
Maitake mushrooms 170g
Mushrooms 30g
Cream cheese 5 portions (to taste)
Dill (excluding the tough stems) 3-4 sprigs
Tube garlic about 2cm
Olive oil as needed
[Instructions]
Heat olive oil and tube garlic in a frying pan,
and slowly sauté the finely chopped maitake and mushrooms
until the moisture has evaporated.
Turn off the heat
and add the chopped dill.
Once it has cooled down, add the cream cheese
and mix together.
Place in a serving dish and chill in the refrigerator for about an hour to finish.

It's strange how adding dill makes you feel like a good cook because of its elegant aroma.
If I have any left over, I even put it in natto, haha.
