Today's Dish: Salad Galette
Buckwheat galettes were something I made a long, long time ago, but they turned into a mushy mess of mochi, and I cursed, I'm never making galettes again! Then one day, I encountered
Picard's frozen galettes, and I completely changed my tune, thinking, Galettes are so Instagrammable!, and became a galette lover.
Last autumn. While starting activities for the
Soba Promotion Club, I learned about the buckwheat galettes using carbonated water that Eijyo-san had introduced, and it was an eye-opener!
I'm not buying galettes anymore. Because the ones I bake at home are the most delicious!
, and I became a fan of homemade buckwheat galettes!
This is my galette history.
And so,
Shall we bake some buckwheat galettes? Salad galettes!

Chaya Farm's buckwheat flour and Dewa Kaori from Murayama City, Yamagata Prefecture) With a ratio of
1 part buckwheat flour to 2 parts carbonated water (75g buckwheat flour + 150cc Wilkinson carbonated water + a tiny pinch of salt)
you can bake three 22cm diameter galettes
. The key is to add a pinch of salt!
🔸 'Arumonde' (Use-what-you-have) Salad Galette
Leftovers from the previous night or pre-made dishes are arranged like a one-plate meal in this 'Arumonde' salad galette. I decide on the ingredients to use while imagining,
What would it taste like if I wrapped this and that in a galette?

potato salad, Japanese-style omelet, and pickled early red onions. The omelet is seasoned with shio-koji, sweet koji, and plain yogurt. Hijiki peperoncino made with garlic, anchovies, and chili peppers, and
etuvée of Petit Vert
It's definitely better with the omelet inside! It's fun to make them with the image of a bento box
in mind.
🔸 Wasabi greens, mitsuba, carrot, and sausage salad galette
Wasabi greens are in their prime right now.Wasabi greens.
They aren't always available in the vegetable section, so if you happen to find them, please try making this combination. The sharp, spicy kick of wasabi greens
pairs perfectly with meat or sausages. It really hits the spot.

Yuzusco
also makes it exciting.
🔸 Strawberry and White Kidney Bean Yogurt Salad Galette
Actually, this is a recipe meant for using small strawberries intended for jam or strawberries that aren't quite perfect, but it's aslightly unconventional salad galette made with affordable strawberries.

Hokkaido-grown Tartary buckwheat tea. The herbs are
salad burnet. The buckwheat galette is
12 cm in diameter. It's a dessert salad galette with just the right amount of sweetness!
🔸 Radish, Turnip, and Lettuce Polka Dot Salad Galette
In the blooming spring, apolka dot salad galette is so exciting, isn't it?

marinated salmon arranged under the polka dot vegetables. It's also drizzled with
ethnic-style mayo. The topping is
lemon balm & dill.
🔸 Colorful Dice Salad Galette
It's a salad inspired by Cobb salad, but you can use any ingredients you like! The dressing is a
beet pickle brine koji dressing.

bell peppers are grilled in a toaster oven and peeled.
Turnips are sprinkled with a little salt to soften.
Cherry tomatoes are cut in half lengthwise.
Chicken ham is seasoned with sugar and salt, then rinsed, patted dry, and marinated with
rosemary and plum wine for 30 minutes before being microwaved (please see the attached recipe for details).
