Wine Bar ViVi quietly lights up the night in Kanayama-cho, Naka-ku, Hiroshima City. Located just one street away from the hustle and bustle of Nagarekawa, the largest entertainment district in the Chugoku-Shikoku region, we offer a sanctuary of silence.

Once you open our heavy door, you enter an  Adult Sanctuary that completely shuts out the noise of the city. Most of our guests come here not just to drink alcohol. They knock on the door of this hideaway seeking excitement and stories that shake the soul—experiences you cannot find in everyday life.

Today, I will tell you the story of a single bottle of wine sleeping in the deepest part of ViVi's cellar, where temperature and humidity are strictly controlled.

Its name is MORLET.

If you are a wine lover, just hearing this name might make you straighten your back. Or, if this is the first time you've heard it, today will be the entrance to a new world for you.

Born in Sonoma, California, but possessing a noble French soul. A true "Cult Wine" that collectors around the world search for with bloodshot eyes, selling out instantly upon release.

Why is this wine, which is difficult to obtain even at grand maisons in Tokyo or five-star hotels, available at a small wine bar in Hiroshima? And why are we so obsessed with this wine and wish for our customers to drink it?

ViVi is located in Kanayama-cho, just one street away from the lively Nagarekawa area. While feeling the heat of the downtown area nearby, a different, relaxed time flows here. A place where you can escape from your busy daily life and relax your shoulders.

What we value in this place is dense time to face wine deeply.

Truly great wine is not just for quenching thirst. From the moment it is poured into the glass, the aroma opens up, the taste changes, and the long finish after drinking it... To immerse yourself in the story that the bottle tells, a Luxe space that makes you forget everyday life is essential.

ViVi's counter is a theater. The main characters are the customer and the wine placed in front of them. The lighting is adjusted so that the brilliance of the liquid in the glass looks most glossy, and the BGM is played at an exquisite volume to create a sense of elation.

Of course, there are many wonderful wines among world-famous brands. However, our criteria for lining up wines in our cellar is not just fame.

What we value is whether the sommelier herself was moved by the taste and strongly wished, I want to share this emotion with my customers.  
We want you to taste the creator's thoughts and the story behind the birth of that wine.

Many wines filled with such thoughts are sleeping in our cellar. Among our collection, there is one "special bottle" that we would especially like to introduce to you this time.

That is the Californian Cult Wine, MORLET.

The Trajectory of Genius Winemaker Luc Morlet French Blood and California Land


He was born into a family of historic winemakers in the Champagne region of France. He received gifted education in winemaking from an early age and polished his skills at a prestigious chateau in Bordeaux—a born "wine person."

In 1996, he crossed over to California in pursuit of his ideal. There, he served as the winemaker at the legendary winery "Peter Michael" and blossomed his talent. And in 2006, fully prepared, he established his own winery, "MORLET Family Vineyards."

■ A Legendary Wine Loved by the White House and NATO? Its ability is not limited to critics' scores. Among wine lovers, such rumors are whispered as if they were true. "It seems that this wine was served at White House dinners and NATO (North Atlantic Treaty Organization) meetings."

Important dining tables where VIPs from all over the world gather and failure is not allowed. Being chosen there is proof that it has not only good taste but also the "dignity" suitable for the occasion.

■ Fusion of Power and Delicacy Common California wines often have a style where "power," blessed by the sun, comes to the fore. However, MORLET is different. Luc Morlet utilized the blessings of California's rich land and climate while introducing "delicacy" and "complexity" like French Burgundy.

Usually, Cult Wines like MORLET are prioritized for specific member lists (mailing lists), first-class hotels in Tokyo, and Michelin-starred restaurants. Honestly speaking, it is extremely rare for them to arrive at local wine bars.

However, ViVi has it.

The reason is simple. Because we burn with a passion close to obsession for [Delivering the Real Thing].

Since our founding, we have built long-term relationships of trust with reliable importers and suppliers. It is not just a business relationship of "I'll pay, so sell it to me." We understand the producer's philosophy, manage the wine in the best condition, and provide it to customers who correctly understand its value. We have stuck to that stance.

Asahi Takasago Beef T-Bone Steak and MORLET: The "Supreme Marriage" Where Sensuality Intersects


Even as a standalone wine, MORLET is undoubtedly a masterpiece. However, if you taste it at ViVi, there is no choice but to pair it with the "Best Partner."

As introduced in previous articles, Asahi Takasago Beef is cattle raised on "Sake Lees" (Sakekasu). Its meat quality coexists with a unique aging aroma derived from sake lees, melting sweet fat, and powerful red meat umami.

The moment this steak meets MORLET. It is a sensual ritual that goes beyond a mere "meal."

■ The Reason for Deliciousness Proven by Science Why do these two fit together? It's not just a sensory story. There is a clear reason.

1. Resonance of Aroma The faint fermentation/aging aroma derived from sake lees possessed by Asahi Takasago Beef. This completely links (synchronizes) with the complex aging aromas like "damp soil" and "truffles" possessed by MORLET, expanding the layers of scent many times over.
