Nursing Care Recipe: Stir-fried Thick Fried Tofu and Eggplant with Miso
Stir-fried eggplant and pork is a classic dish, but you can also make a delicious version using thick fried tofu (atsuage) instead of meat. Thick fried tofu is easy for elderly people with poor teeth to eat without any issues, and it also provides a good amount of protein. The dish I am introducing today is a stir-fry seasoned with a sweet and savory miso and ginger sauce. The trick is to stir-fry the eggplant thoroughly in plenty of oil for about 2 minutes so that it absorbs the oil and coats easily with the miso. It is a budget-friendly side dish that goes well with both rice and beer. Please give it a try.

Ingredients: Serves 3-4
Eggplant... 2
Silk-fried tofu (thick fried tofu)... 2 pieces (approx. 260g)
Ginger... 1 piece (approx. 5g)
Seasonings
Miso... 1.5 tablespoons
Sake... 1 tablespoon
Mirin... 1 tablespoon
Soy sauce... 1 teaspoon
Sugar... 1 teaspoon
Instructions
Remove the stems from the eggplants, cut them in half lengthwise, then slice them into 5mm thick ginkgo-leaf shapes. Soak them in water to remove any bitterness, then drain in a colander.
Cut the thick fried tofu into pieces 2cm wide, 3-4cm long, and about 5mm thick. Julienne the ginger.
In a bowl, combine all the seasoning ingredients to make the sauce.
Heat 1-2 tablespoons of vegetable oil (not listed) in a frying pan and sauté the ginger. Once fragrant, add the eggplant and stir-fry over medium heat for about 2 minutes, letting it thoroughly absorb the oil.
Once the eggplant is well-cooked, add the thick fried tofu, stir-fry for about 30 seconds, then pour in the sauce from step 3 all at once and stir to combine. Turn up the heat slightly at this point.
Once the sauce has thoroughly coated everything and the mixture looks thick and glossy, it is ready.
If you like spicy food, you can add chili peppers or doubanjiang to taste. Even children who don't like eggplant might eat it if it's seasoned with a sweet and savory miso flavor. Although it doesn't contain meat, the addition of thick fried tofu gives it volume, making it a dish that works not only as a side dish but also as a main course.
