Kimigoromo
I received a confection called "Kimigoromo" from Shogetsudo.
The moment I saw it, I thought, "Is this deep-fried tofu!?"
Just by looking at it, you can't imagine what it is.
It seems to be made by adding sugar and honey to meringue, setting it with agar, coating it in egg yolk batter, and baking it.
When I took a tentative bite,
it crumbled with a soft, airy sound.
It's definitely not deep-fried tofu (lol).
Thinking, "What is this texture!?", I kept eating it until it was gone. It's like air.
This texture is one of a kind.
The taste is elegantly sweet.
The egg flavor reminds me a little of French toast.
In a world overflowing with photogenic sweets,
confections like Kimigoromo are, conversely, very memorable.
