酸葉 （スイバ）


ナデシコ目、タデ科、スイバ属の多年草


ヨーロッパを原産とするもので、日本へは
明治時代の初期頃に意図せず渡来、帰化。
今では道端や荒地に生える植物で、雑草の
カテゴリーに入る。あまりにもそこら辺に
自生しているので、これを読まれる方々も
気にも止めないで素通りをしている植物の
ひとつとして認識されるものだと思う。


その花の形から昔の人は、この植物の事を
「牛の舌」とも呼んでいたとされている。
『蓚』（スイバ）は、元の漢字表記は『酸葉』
これは文字通り、葉っぱが酸っぱい事から
それはお酢にも匹敵する酸っぱさともなる。
この植物はしっかりアクを抜いてやる事で
お浸しや和え物としても食べられるのだが
シュウ酸を多く含む事から、大量に摂取を
する事は控える必要がある。


酸葉は花径３ｍｍの小さなものを咲かせる。
薄緑の花は、徐々に赤い花へと変化する。

昔の人は長旅をする際に、この植物を懐へと
忍ばせて、喉が渇くとこれを少しだけ口の中
に放り込むと酸っぱさから唾液が出ることで
喉の渇きを癒したとされる。

あまりに身近にある植物のためにこれの花を
認識される方は非常に少ないと考える。

Sorrel (Sui-ba)


A perennial herb of the order Caryophyllales, family
Polygonaceae, genus Rumex.


Originally native to Europe, sorrel was unintentionally
introduced to Japan around the early Meiji period and
has since become naturalized. Today, it grows along
roadsides and in wastelands and is commonly regarded
as a weed. Because it is so widespread and
commonplace, most people likely pass by it without
even noticing.


Due to the shape of its flowers, people in the past
referred to this plant as “cow’s tongue.” The Japanese
name “蓚” (Suiba), originally written as “酸葉” (literally
“sour leaf”), comes from the sour taste of its leaves—so
sour, in fact, that it can be compared to vinegar.


With proper preparation to remove its astringency, it
can be eaten as a boiled green or in dressed dishes.
However, since it contains a high amount of oxalic acid,
it should not be consumed in large quantities.


Sorrel produces very small flowers, about 3 mm in
diameter. These light green blossoms gradually turn
reddish as they mature.


In the past, travelers would tuck a bit of this plant into
their garments and place a small piece in their mouths
when thirsty. The sourness would stimulate saliva
production, helping to alleviate their thirst.


Because this plant is so common and inconspicuous,
very few people today are even aware of what its
flowers look like.
