With bright red, vivid veins running through round, vibrant green leaves,
the stems and leaf veins are used as a colorful garnish for dining tables.
It is a vegetable widely distributed in its native Europe, as well as North America
and Asia.
Belonging to the Polygonaceae family, its pleasant acidity
comes from the oxalic acid it contains.
The Western name 'SORREL' is a word meaning 'sour',
and besides salads, it is also used as an accent to add acidity
to soups, sauces, and more.
Originally, when this plant grows large, its leaves can reach 80
cm in length, but for culinary enjoyment, baby leaf sizes of
about 10-15 cm are preferred for cooking. When it blooms with green or red
flowers, it can reach a height of 1 meter.
The Japanese name, besides 'Suiba' (sour leaf), includes the name 'Gishigishi' (dock),
which comes from the shape of its leaves, but it is also said to originate
from the 'gishi-gishi' sound made when these sturdy leaves are stacked during harvest.
It is interesting that it is named based on onomatopoeia unique to Japan.
The Western name 'Rumex' is a word meaning 'spear',
derived from the characteristic shape of the leaves.
Since the oxalic acid contained in this vegetable can be toxic to the body
if consumed in excess, it is recommended to keep intake to a moderate amount.
