When the tide recedes, a sandy path to the shrine quietly appears.
Looking up, the stars seem as if they might spill down.
Omoiya Sake Brewery.
In the light of the brewery that has been passed down,
the fire known as sake is shared once again.

Now, to the main subject.
Uncorking.
The aroma is released as if it were bursting forth.
The fragrant sweetness of a ripe melon.
Or perhaps, the red of wild strawberries wet with morning dew.
Taking a sip.
Vivid.
A raw vitality that one would not expect from a pasteurized sake.
It fills the palate.
A mellow sweetness, followed by the refinement of acidity.
A transparent brilliance that has scooped up the island's starry sky.
The finish.
While brimming with the layered flavors of fruit,
it disappears at the end as cleanly and gracefully as a sea breeze.
It is calm.
A quiet exhilaration that visits after the passion.
