The devil stinger is, contrary to its fearsome appearance, known as a highly delicious luxury fish.

This time, I will introduce the devil stinger.
The exquisite taste known as the "King of White Fish"
The meat of the devil stinger is a beautiful, translucent white with a firm, elastic texture. While elegant and light, it releases a rich umami flavor the more you chew, and it is so delicious that it is described as the "King of White Fish", rivaling even pufferfish and flounder.
From sashimi to hot pot! Enjoy its texture in a variety of dishes
You can enjoy the crunchy texture of fresh fish as sashimi (otsukuri), or simmered or deep-fried, where the meat becomes fluffy and soft, allowing you to enjoy a different kind of deliciousness. In particular, the scraps such as the skin, liver, and stomach are also delicious, making it a fish with very little waste.
The gap between its tough look and camouflage
It has seaweed-like protrusions called skin flaps on its head and back, and it got the name "oni" (demon/devil) from its rugged face. Its habit of lying in wait for prey by camouflaging itself against rocks and seaweed in shallow sandy mudflats makes it a true master of underwater hiding.
The "dangerous charm" of its venomous spines
Dorsal fins and other parts contain venom glands, making it a highly venomous fish that causes intense pain if you are stung. However, the fact that a chef carefully removes these dangerous spines to safely transform it into an exquisite dish only adds to its value.
Aspects as a "lucky charm"
Since ancient times, there has been a tradition based on the legend that the "Mountain Goddess" is an ugly woman, so offering an ugly fish like the okoze would please her; thus, it is also treated as a lucky fish. Occasionally, golden-colored individuals are found, making them a topic of conversation as lucky fish.
