Making delicious Spanish omelet with bitter melon
This is the one for a Japanese-style omelet!
Thinly slice the bitter melon, which is at its most delicious and nutritious right now, sprinkle with salt, and let it sit for a while. The bitter components will be neutralized, so rinse them off lightly and drain well.
Lightly sauté the bitter melon first.
Add two eggs, whitebait, sausage if you have it, a little light soy sauce, and mirin, mix it all together, and cook both sides in a frying pan over medium-low heat.
This is a staple in our home.

If you catch it with a flat plate and flip it over,
it will go well.

A convenient omelet that you can cut into your preferred size and use for breakfast, dinner, or as a side dish for a bento box.
Bitter melon stir-fry is good, but this is my favorite simple recipe.
It is standard for me to always cut up fish sausage and add it, but I was out, so I substituted whitebait. I think this was also good.
