Shimana (Island Greens)
Shimana is a leafy green beloved in Okinawa, a type of mustard green.
It has a pleasant spiciness and a unique aroma, which is known for stimulating the appetite.
It is rich in beta-carotene, which converts to vitamin A in the body, helping to protect the health of skin and mucous membranes and maintain immune function.
It also contains vitamin C, calcium, and iron, making it suitable for nutritional replenishment during the tiring summer season.
It pairs well with oil, and stir-frying it increases the absorption rate of its nutrients.
In Okinawa, it is a staple on the dining table and is valued as a vegetable that keeps the body healthy from the inside out.
Stir-fried Shima-na
Ingredients (for 2 servings)
・1 bunch of Shima-na
・80g pork belly
・A little garlic
・A little soy sauce
・A little oil
Instructions
Cut the Shima-na into bite-sized pieces
Heat oil and garlic in a frying pan, then stir-fry the pork
Add the Shima-na and stir-fry quickly over high heat
Season with soy sauce to finish
