The last Sunday roast my husband and I had before returning to Japan, and surprisingly easy chestnut rice with the inner skin left on🌰
Today is Sunday, and I made a Sunday roast using the pork I bought at the butcher's yesterday.
Since I'm returning to Japan in two days, I want to clear out the fridge as much as possible, so I've only bought the bare essentials. It would be a waste if David let them go bad without using them😂
I had a large amount of chestnuts I harvested the other day sitting in the fridge, and since we hadn't eaten any at all, I decided to wash them and freeze them.
I put the chestnuts in a large bowl with water, and when I thought I'd throw away the ones that floated because they might have bugs, quite a few of them floated to the top.
When I wondered, 'Are there really bugs in them?' and cut them in half with a knife to check...
It's true that about half of them had bugs, but the rest looked perfectly fine to eat😆 So, I peeled the outer skin of the cut chestnuts and decided to make chestnut rice in a clay pot with the inner skin left on🌰

This was surprisingly delicious and a great success✨ You can eat them deliciously even with the inner skin left on. I feel like there's some nutrition in the skin, so maybe this is actually better?🤭
The chestnut skins were also surprisingly easy to peel, and it didn't take that much effort. I regretted not making chestnut rice sooner.
Today's Sunday roast was roast pork, as usual✨
In our house, it's usually chicken or pork; I've never made roast beef at home😂
Today's roast pork turned out delicious. It was perfect, except for the fact that the onions turned pitch black😂

I put just the onions in a separate dish.

I also boiled the leftover pumpkin along with carrots and peas...

We enjoyed it with plenty of onion gravy sauce.
When I told David, 'I'll get to the airport on my own the day after tomorrow,' he said, 'I'll drive you,' so I decided to take him up on his offer🚘
Since the flight leaves at 10:20 AM, we have to leave the house before 7:00 AM, and I feel bad about it, but...
When returning from the UK to Japan (Fukuoka), it's a hassle to have to pick up my luggage at Haneda once😓
After that, I have to change terminals, too. It's so much easier when returning from Fukuoka to London, as I don't have to pick up my bags until Heathrow...
Well, I need to start packing my suitcase soon or I won't make it in time. I really am the type who waits until the very last minute😂
So, I've got a fire under my seat💦
I'll definitely do it tomorrow (which is already the day before😅).
I bought so many souvenirs that the amount is incredible, so I hope they all fit properly🤭
