How to make gari
Now, let me write about my top recommendation, gari.
Gari is often associated with sushi, but I love ginger, and I started making it with fresh ginger last year.
I also like the warm, tingling sensation you get when you drink tea while the taste of gari is still slightly lingering in your mouth, and sometimes I even have gari and tea as a snack.
It also has intestinal regulating properties, is easy to make, and you can adjust the taste to your own preference, so if anyone is interested, please try making it yourself!

[Ingredients]
Fresh ginger: 3 medium pieces, 200g–300g
Vinegar (rice vinegar recommended): 200cc *Any vinegar you like is fine!
Sugar: 100g *Adjust to your preference! It's fine to use much less.
Salt: 10g
How to make minced ginger (Momoya style)
Since you only use a small amount of ginger at a time, have you ever had trouble figuring out how to store the rest?
When fresh ginger isn't in season, I tried making something like Momoya's minced ginger. It's recommended because it turns out delicious even if you eyeball the measurements!
