[Lazy Additive-Free | 10-Minute Side Dish] Microwave Soy Sauce Koji Kinpira

No frying pan used means less washing up ・Deep flavor without sugar or dashi by using
soy sauce koji
[Ingredients]
(Easy-to-make portion)
・Burdock root... 3 thin stalks
・Carrot... 2 small stalks
・Hon-mirin... 1 tbsp
・Pure rice sake... 1 tbsp
・Soy sauce koji... 1.5 tbsp
・White sesame seeds... to taste
・Sesame oil... 1/2 tsp
[Instructions]
1. Cut the carrots and burdock root.
Cutting them in half lengthwise and then into thin diagonal slices
is easy.

2. Place in a heat-resistant container and microwave for 2 minutes.
Place the lid on top or
cover lightly with plastic wrap.
3. Drain the water and mix in the seasonings.
Draining the water released by the vegetables
prevents it from becoming watery.
Hon-mirin... 1 tbsp
Pure rice sake... 1 tbsp
Soy sauce koji... 1.5 tbsp
Add and mix.
4. Microwave for 2 minutes without a lid.
No lid or plastic wrap is needed to let the moisture evaporate.
It's ready once the vegetables are soft enough to eat.
If they are still hard, microwave for another minute or so.
5. Add the white sesame seeds and sesame oil, then mix to finish.
Use as much white sesame as you like,
and about 1/2 teaspoon of sesame oil.
6. Let it cool without a lid.
Letting it cool while allowing the steam to escape
prevents it from becoming watery.
7. It tastes even better after some time has passed as the flavors soak in.
When making it ahead of time,
it is fine if the flavor feels a little light.
By the next day, the flavors will have melded and it will be just right.
The story behind this recipe
After I started having health issues due to additives,
I wanted to find a way to make delicious kinpira
without using store-bought granulated dashi,
and without using a frying pan,
so I came up with this.
