A tamarind juice from Yunnan Province that is sweet and sour. Tamarind, a legume, is sour when unripe and becomes somewhat sweet when ripe. In China, the former is called |suānjiǎo (sour horn) and the latter |tiánjiǎo (sweet horn). Suanjiaozhi is made by boiling tamarind fruit into a paste, then adding water and |hóngtáng (brown sugar) made from boiled-down sugarcane.
