Hello, I'm Kim-chan, the petite owner of Izakaya Kim-chan.
The day after the shop was decided.
The first thing I looked into immediately was whether there was a supermarket near the shop.
This is a true story that sounds like a lie; it was written in my diary from back then, the day after the property was decided. Seriously.
Well, it's true that during my pop-up and sublet business days, my main source for supplies was the nearby supermarket and greengrocer.
Furthermore, I had almost no experience in the restaurant industry. (I had worked in the front of house, but I had never stepped foot into cooking or ordering.)
Having always done things as an extension of home cooking, I knew absolutely nothing about the mechanisms of purchasing and ordering for a restaurant.
So, if I didn't have my weapons—the supermarket and the greengrocer—I reached the conclusion that I wouldn't be able to operate (which is amazing to think about now).
I won't forget the despair of this day (lol).
Even though I finally secured a property...
if there's no supermarket, I can't operate...
I seriously thought things like that.
In a way, when I think about it now, I find my past self adorable (lol).
No, I also think I was way too ignorant—how did I even think I could open a shop?
Furthermore, I also think, how on earth did I manage to open in just over a month from this situation? Can I really open in a month from here??? lol
From here on, I will be helped by so many people to open the shop.
I, who was not even a baby but at a fetal level of izakaya management, will run toward the opening day, doing my best while exposing my ignorance and embarrassment.
